  • ‏Rice:
  • 2 ‏Laung
  • 1 ‏Green cardamom
  • 1 ‏Bay leaf
  • 1 tablespoon ‏Oil
  • ¾ cups ‏Washed rice
  • 2 cups ‏Water
  • ¼ oz ‏Cumin seeds
  • ‏Chicken Layer:
  • 2 tablespoon ‏Curd
  • 1 ‏Tomato, sliced
  • 250 g ‏Chicken
  • 1 small ‏Chopped green chili
  • ½ teaspoon ‏Coriander powder
  • ½ teaspoon ‏Zeera powder
  • ½ teaspoon ‏Powder of red chili
  • ½ teaspoon ‏Turmeric powder
  • 1 teaspoon ‏Ginger garlic paste
  • ½ ‏Onion, sliced
  • 1 ‏Bedki red chili
  • ½ teaspoon ‏Cumin seeds
  • ¼ oz ‏Oil
  • ‏Vegetable Layer:
  • ‏Salt to taste
  • 1 ‏Boiled potato, cut into small cubes
  • ½ ‏Capsicum, sliced
  • 1 ‏Sliced onion
  • ½ teaspoon ‏Cumin seeds
  • 1 teaspoon ‏Oil
  • ‏Milk Layer:
  • ¾ oz ‏Butter
  • 2 ‏Strands of saffron
  • ½ cup ‏Milk

This is one delicious rice recipe that is cooked on low flame and incorporates a variety of Indian spices and components. For this particular recipe, you are going to need a handi pot.

Directions

1. Boil the water in a medium sized pan.

2. In another pan, heat the cumin, cloves, cardamoms, bay leaf and oil together. Stir this mixture for a couple of minutes.

3. Wash the rice and transfer them to a sizeable pan. Add the water to this and cook the rice. Once they are done, drain the rice and spread them out in a large dish to cool.

Vegetable Layer:

1. In a separate pan, add oil, a couple of cumin seeds, chopped julienned onions and mix for a few minutes.

2. Toss in the capsicum and mix it well.

3. After two minutes pour in the oil and the boiled potatoes.

4. Sprinkle salt on top of this, mix it a little and set it aside.

Chicken Layer:

1. Take another pan and heat the oil in it. Add the bedaki chilies, the coriander powder, cumin, chili powder, ginger and garlic, and the cumin seeds.

2. Add in a few drops of oil and stir this for around 2 minutes. Season with salt.

3. Mix in the chicken and stir for a couple of minutes.

4. Add the tomatoes and sugar. Cook this for around 10 minutes.

Milk Layer:

In a pan, heat the milk and saffron. Add in the butter and stir this for around 2 minutes.

Bringing it All Together:

1. Pour the chicken gravy into the handi pot.

2. Take half of the rice and spread them at the bottom, on top of the gravy.

3. Top this with a layer of chicken and a bit of gravy.

4. Layer all the rice over this.

5. Add the final layer of vegetable, and sprinkle that with lime juice and the milk.

6. Cook this on low flame for half an hour.
